During a recent trip through Belgium, I had the opportunity to visit several specialist chocolate shops and artisan chocolatiers, each offering a glimpse into a craft that has been refined over generations.


What struck me wasn't simply the quality of the chocolate itself. It was the attention to detail, the pride in craftsmanship, and the understanding that exceptional results come from respecting both ingredients and technique.

As a chef, those principles felt very familiar.
